Melon Balls with Ginger Spiced Caramel Sauce
This is a great recipe and makes a lovely Christmasy treat. It's a nice change to the heavier Christmas fare but with all the rich flavours of Christmas. You can experiment with ingredients too – perhaps orange zest, rum or nutmeg to make it your own.

Melon Balls with a Ginger Spiced Caramel Sauce
- Defrost the Melon Balls on a plate at room temperature for 3 – 4 hours.
- Melt the butter in a saucepan over a medium heat. Add the sugar and ginger.
- Keep stirring and continue to heat until melted. Do not allow the mixture to boil.
- Add the cinnamon and mixed spice.
- Stir in the double cream.
- Pour over melon balls and serve.
