Melon Balls with Ginger Spiced Caramel Sauce

This is a great recipe and makes a lovely Christmasy treat. It's a nice change to the heavier Christmas fare but with all the rich flavours of Christmas.  You can experiment with ingredients too – perhaps orange zest, rum or nutmeg to make it your own.

      

 

Melon Balls with a Ginger Spiced Caramel Sauce Ingredients 450g Ardo Frozen Melon Balls – Available in Iceland, 200g soft dark brown sugar, 50g unsalted butter, 25g grated root ginger, 2x tsp (10g) ground cinnamon, 1x tsp (5g) mixed spice, 200ml double cream.

 

 Method
  1. Defrost the Melon Balls on a plate at room temperature for 3 – 4 hours.
  2. Melt the butter in a saucepan over a medium heat.  Add the sugar and ginger.
  3. Keep stirring and continue to heat until melted.  Do not allow the mixture to boil. 
  4. Add the cinnamon and mixed spice.
  5. Stir in the double cream.
  6. Pour over melon balls and serve.
